Ronda wines at La Pilastra

La Pilastra’s wine list starts with Ronda: reds from Serranía wineries, many also by the glass, plus whites, a rosé and a sparkling wine from the area. Wines from other Spanish regions and a selection of Champagne complete the list.

The Serranía de Ronda as a wine area

Ronda wines fall under the DO Sierras de Málaga, in which the Serranía de Ronda is one of the production areas. It is overseen by the Regulatory Council of the Málaga and Sierras de Málaga Designations of Origin.

These are inland, mountain vineyards around a town set on a plateau ringed by sierras, and most wineries are small. Each has its own style, so two Ronda wines can be very different from each other.

What you will find on the list

Ronda reds are the largest part: wineries such as Seis + Seis, Huerto de la Condesa, Lunares, Los Aguilares, Descalzos Viejos and Federico Schatz, among others, with the grapes of each wine shown on the full menu. Several are poured by the glass, an easy way to try more than one during a meal.

The Serranía also appears in whites, a rosé and a sparkling wine. If you prefer a familiar region, the list moves through Ribera del Duero, Rioja, Rías Baixas, Rueda and other appellations, and ends with cava and Champagne. Prices and availability for each wine are on the menu; if one is out, the team will suggest another.

How to choose

The easiest way is to start with the food and take advice. Tell the team what you are ordering and what you like — lighter or fuller, red or white, a glass each or a bottle for the table — and they will suggest something from what is open that day.

As a starting point, a stew such as Ronda-style oxtail stands up to a structured red; a Serranía cheese board or the Iberian ham suit a wider range, and a table of sharing plates is happy with something versatile or with wine by the glass. These are not rules, just a way to start the conversation.
