Almadraba bluefin tuna: tataki and belly
At La Pilastra, almadraba bluefin tuna appears in two main dishes: the tataki, served with miso and soy purée and almonds, and the tuna belly, with roasted peppers and pickled cucumber. The tataki is the lighter choice; the belly is the richest, most flavourful cut of the fish.

What “almadraba” means
The almadraba is a traditional fishing method on Andalusia’s Atlantic coast: a maze of nets that intercepts tuna on their migration. Bluefin tuna caught this way is one of the most prized ingredients in Spanish cooking.
The menu states that origin; if you would like to know more about the tuna the kitchen receives, ask the team.

Tataki or tuna belly
Tataki is a Japanese technique: the fish is seared very briefly on the outside, left raw inside and served in slices. Here it comes with miso, soy and almond, one of the more contemporary dishes on the menu.
Ventresca is the belly of the tuna, the fattiest part. Roasted peppers and pickled cucumber bring acidity and freshness against that richness. If you want something lighter, choose the tataki; for the most flavourful cut, the belly.

Another way to try it
The tomato selection with tuna belly puts the fish into a fresh starter to share before a meat or fish main. Allergens for every dish are listed on the menu.
A white wine is usually a good match for tuna; ask the team or browse our Ronda wines.
