100% acorn-fed Iberian ham shoulder

La Pilastra serves 100% acorn-fed Iberian ham shoulder as a board to share. It is a classic way to open the table with Iberian produce: shoulder ham has an intense flavour and well-marbled fat, and is best enjoyed in the middle of the table while the mains are on their way.

Shoulder or leg

Paleta is the front leg of the pig and jamón the hind leg. The shoulder is smaller and has more bone for its size, but its meat is usually more marbled, with an intense, aromatic flavour.

“100% bellota” is the label for Iberian pork fed on acorns during the montanera season. For details of the ham the restaurant serves, ask the team.

When to order it

It is a plate for the middle of the table: a good way to start as a group, or to have something with a drink before choosing the rest.

For more local produce, pair it with the Serranía cheese board. The huevos rotos also come with Iberian ham, over fries with truffle oil, if you would rather have it in a hot dish. As a main, the Iberian pork presa follows the same line.

What to drink

A fino or a manzanilla, both on the drinks list, are the classic match for Iberian ham, and a Serranía red works too. The wineries we pour are on Ronda wines.
